This
handbook is about the study of methods used in evaluation of both milk, and
milk products. It focuses on on the
biological, chemical, physical, and microbiological aspects of milk itself, and
on the technological (processing) aspects of the transformation of milk into
its various consumed products, including consumer milk and cream, butter, milk
beverages, fermented products, concentrated and dried products, and ice cream. During laboratory
practices students have improved their professional laboratory skill in the
evaluation of milk and milk products (organoleptic evaluation, microbiological
determination, detection of physico-chemical properties of milk and milk
products). Students have received knowledge about the system used for the payment
of the raw milks according the standards used all over the world as well as
about the systems used for the evaluation of hygienic conditions on the milk
farms and dairy plants according to the European commission requirements.
